Local restaurants offer a variety of different dishes from traditional Maltese cuisine. Those restaurants can take the advantage of all necessary ingredients available fresh and locally. Also, professional, local chefs, who know how to prepare traditional Maltese dishes. Restaurants serving local cuisine have a variety of different tastes and flavours thanks to rich national cuisine. Throughout history, this small island has been influenced by many different cultures and cuisines, hence, Maltese cuisine is so rich and diverse. Mostly inspired by Italy (especially Sicily), Spain, France and other Mediterranean countries. Because of its strategic position and compulsion to import most food products, it was natural to adapt some of the foreign tastes. A good example can be Aljotta, a fish broth which is Maltese version of French Bouillabaisse. Also, pastizzi, favourite fast food snack in Malta, have much in common with the filo and puff pastry of Greece and the Balkans' version of borek. As for the national dish, the honour goes to stewed rabbit called stuffat tal-fenek. Local restaurants are mostly serving rabbit meat, as it's quite popular in Malta, as well as lamb. Another traditional dish special for Maltese cuisine is Lampuki Pie, which is basically a fish pie, made of fish locally occurring between August and December. Not to be missed is Ġbejna, a small round cheese made of sheep or goat milk. It can be served fresh, sun dried, salt-cured or peppered, once again something to satisfy various preferences. All of above can be found in Maltese restaurants around Malta and Gozo.
Maltese desserts are mostly adapted from Sicily, including gelato, granita, kannoli and Helwa tat-Tork - a sweet mixture of whole and crushed almonds.

Thanks to its location and influences from other Mediterranean cuisines Maltese restaurants offers a variety of seafood and fish dishes. Olive oil is also quite popular around. For the true Maltese fish experience, it's good to visit Marsaxlokk, a small charming fishing village located at the southern part of the island. Every Sunday morning you can find there all the fresh seafood and fish. Vegetarians can find many vegetable dishes with a variety of dips. Once again thanks to the close proximity of Italy, Malta can offer many pasta dishes and pizza.
