Guinness Beer Cheese Dip
Preparation time: 10 minutes
Cooking time: 15 minutes
Servings: 16
Ingredients:
Approximately 900 g or 4 tubs cream cheese cut into 1/2-inch cubes
1 cup Irish stout beer
1/2 cup salsa (use your favourite brand, or make your own)
2 tbsps Worcestershire sauce
1 tsp chilli powder
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional)
Directions: Heat cream cheese in a pan on low until melted, about 5 minutes. Stir beer, salsa, Worcestershire sauce, chilli powder, onion powder, and cayenne pepper into cheese until smooth and heated through, stirring frequently, about 10 minutes. Serve with tortilla chips.
Beef and Guinness Stew
Preparation time: 30 minutes
Cooking time: 3 hours 15 minutes
Servings: 6
Ingredients:
1 kg boneless stewing beef, cut into cubes
2 tbsps butter
2 tbsps olive oil
1 large onion, peeled and cut into 12 wedges
2 tbsps unbleached all-purpose flour
440 ml Guinness
375 ml beef or chicken broth
1 medium-sized turnip, peeled and cut into large cubes
4 carrots, peeled and cut into chunks
4 potatoes, peeled and cut into large cubes
1/2 cup diced prunes
1/2 cup chopped flat-leaf parsley
Salt and pepper
Directions: Preheat the oven to 165°C. In a large oven-proof saucepan brown the meat in the butter and oil. Season with salt and pepper. Keep the meat aside on a plate. In the same pan, brown the onion. Add oil, if needed. Sprinkle with the flour and stir to combine. Deglaze with the beer and bring to a boil, stirring constantly. Return the meat to the pan. Add the broth, turnips, and carrots and bring to boil. Season with salt and pepper. Cover, place in the middle of the oven and bake for 2 hours. Add the potatoes and prunes and stir to combine. Cover and cook for about 1 hour, or until the potatoes are cooked and the meat is fork-tender. Add the parsley and adjust the seasoning. Serve with sour cream.
Black Velvet Baby Cakes
Preparation time: 35 minutes
Cooking time: 25 minutes
Servings: 6
Ingredients:
100 g softened butter
175 g light brown soft sugar
1 egg 100 g self-raising flour
50 g ground almonds
1⁄2 tsp bicarbonate of soda
5 tbsps cocoa, plus a little extra for decorating
150 ml Guinness
For the cream: 200 ml double cream
25 g icing sugar
Splash Champagne or Prosecco (optional)
Directions: Heat oven to 180°C / 160°C fan. Grease and line a muffin tin with baking parchment. Put the butter, sugar, egg, flour, ground almonds, bicarbonate, cocoa and Guinness in a mixing bowl. Beat together until lump-free. Divide between six muffin holes then bake for 20-25 minutes until risen and a skewer poked in comes out clean. Cool for 15 minutes, then remove from tins and cool completely – the same way up they baked, don't turn upside-down. Whip cream with the icing sugar and splash of Champagne until thick. Spoon a dollop onto the top of each cake and dust with a touch of cocoa. Serve with Champagne, Prosecco, or Guinness.
